Cheese Fingers


3 loaves Empire White day old bread
2 eggs
1 ½ cups milk
Melted butter
24 ounces grated Parmesan cheese

Remove the crusts from the bread.  Combine eggs and milk in a bowl.  In a second bowl place the melted butter and sprinkle the Parmesan cheese on a plate.  Dip one slice of bread in the egg mixture and place it between two dry pieces of bread.  Cut into 4 fingers.  Dip one side in butter and then cheese, leaving one flat side clean.  Bake on a non stick cookie sheet for 15-20 minutes at 350.
